*~15 Ripe Roma tomatoes finely chopped. *1 medium white onion finely chopped *1 batch of cilantro leaves, no stems. (real exact I know! I just use the whole thing that I get at the store since I LOVE cilantro) *2 serrano peppers (if you are brave, substitute 1 of the serrano peppers for a habenaro pepper, just be sure to wear gloves when handling it!) *1 large jalepeno pepper *A clove of garlic chopped or ~a 1/2 tablespoon of the chopped garlic in a jar *dash of salt *two limes -squeeze all the juice in and discard the rest
I've finally caved in and started using the food processor to chop up the onions and the cilantro and peppers, and just put it in there all in together, only on low though, and just real quick so it doesn't go to liquid! I make it so often, my hands can't handle all the chopping!
My tomato plants are hinting with their flowers, and the peppers are starting to look productive, too. I'll have to save that recipe! Way up here in NE Wisconsin, the garden bears fruit later than most.
I'm a science geek by trade, wife to a great hubby, mom to two "bunnies" and we have two big dogs thrown into the mix as well, a Siberian Husky and Golden Retriever. I am winging this thing called parenthood and trying to not mess my kids up too much in the process.
My husband and 100lb golden snore and my kids are often awake before the sun comes up, so it is best to not talk to me until I have had a shower and a cup of coffee......
